Tasty aubergines (Melanzane sfiziose)
Instructions
Prepare a sauce with the tomatoes (a tomato for each Eggplant), abundant oil, salt and your choice of garlic, oregano and parsley. Cut eggplants in half lengthwise-1 Eggplant ogni counted 2 people.
Pulpal carve checkerboard cuts then. Put in oven at 180° for 15 minutes. Meanwhile, mince the garlic and parsley. Remove from oven and add Eggplant sauce over each and place in the oven for another 15 minutes. When you are ready you can present them in a pot, surrounded by tomato and cheese, or as advised by your creativity.
