Put egg yolks in a bowl and half the lemon juice, adding just salt and pepper. Begins to mix with the whip. As soon as the sauce starts to acquire a certain creaminess began to add oil flush (be careful because it is easier said than done). Continue to work the mixture just until the oil. Same thing for the remaining lemon juice, add little by little.

Pay a lot of attention because it's easier than mayonnaise "GA-GA": it says so when the sauce can no longer absorb the oil and what happens when you pour too, all at once. Anyway, if it were to happen you can recover it: absolutely avoid to add another egg, because the move is totally useless. Take the new yolk, tilted or bumped as and add to this mad mixture, a little at a time. Stirring constantly, as desired, you can add a teaspoon of mustard.
