Instructions

Remove the stems of the mushrooms (which will serve for another preparation), clean the heads with a damp cloth.

Remove the rind of bacon slices and cut them into cubes.

Peel and finely chop the garlic.

Melt the butter in a thick-bottomed pan and Brown the bacon for 5 minutes, stirring with a wooden spoon.

Add the mushrooms and garlic and stir until mushrooms are anointed on all sides.

Sprinkle parsley, sprinkle cayenne pepper, salt and pepper, stir.

Cover and let Cook for about eight minutes on a regular basis at very moderate fire shaking the Pan frequently, until the mushrooms are tender.

Wet your hair with lemon juice, taste, add salt and pepper if necessary and stir one last time.

Serve immediately in a bowl of warm service.

Suggested wine: Marzemino.
