With a small knife remove the inner flesh from the rind of the pineapple, eliminating even the leathery part.
Cut the flesh into slices an inch tall, arrange them on a slightly concave dish and sprinkle with sugar and rum.
Leave in the refrigerator at least an hour before serving.
