Salted duck
Instructions
Cover the bottom of a baking dish with a layer of coarse salt, place duck, well connected with a thin Twine and cover it completely with coarse salt, squashing well.
Bake in very hot oven (about 220 degrees) for at least an hour and a half.
When cooked, remove the salt and lift the duck grabbing for the Twine.
Salt cooking: completely cover the meat with salt; in order to be faster when serving wrap in greaseproof paper before the sale; break always wrap in front of diners to appreciate them all the aroma of the food.
