Favorite duck
Instructions
Cut the duck into pieces and remove the fat as much as possible.
Make a chopped garlic, bay leaf, olives, Rosemary and Brown in oil.
Add duck pieces in the Pan and FRY both sides for a few minutes.
Season with salt and sprinkle with the white wine.
Cover with a lid and simmer.
When the wine has evaporated, add more until the end of cooking.
Wine: Barbaresco, Piedmont, 4-8 years.
Favored refers to the lover of the King Vittorio Emanuele II, probably the beautiful Rosina.

- 1 1200 g duck
- 5 cloves of garlic
- 2 leaves of laurel
- Pitted black olives
- 2 tablespoons of chopped rosemary
- 30 g of olive oil extra virgin
- 2 glasses of white wine
