Spit-Roasted Duck
Instructions
Season the duck inside and out; introduce Laurel leaf 1, 1 sprig of Rosemary and Sage 1; fasciarla outside with the same flavors using kitchen Twine.
Spennellarla with oil and infilzarla in the spit.
Cook for an hour, brushing often with sauce that is gathered into the dripping pan.
Cut into 4 portions and serve accompanied by bread sprinkled with cooking.

- 1 1000 g duck
- 1 leaf sage
- 1 leaf of laurel
- Leaf 1 of rosemary
- 4 slices of toasted peasant bread
- 2 tablespoons of olive oil extra virgin
- Salt
