Instructions
Mounting to foam the yolks with the sugar, add the juice and zest of lemon, the sheets of isinglass softened and loose with lemon juice, egg whites and mix well.
Put in refrigerator for 2 hours in cups and serve decorated with candied lemon rind.

- 3 egg yolks
- 100 g of sugar
- 2 lemons (zest and juice)
- 3 sheets of isinglass
- 2 egg whites
- Candied lemon rind
