Shrimp with orange cups
Instructions
Wash the prawns then boil them for about 10 minutes, finally sgusciateli and let them cool.
Wash well and dry oranges then cut 3 in half horizontally.
Remove the pulp (keep it aside) half-oranges svuotandole completely.
Wash and dry the salad and more tender leaves of a bunch of Arugula.
With the egg yolks, oil and salt prepared mayonnaise.
With a potato peeler to remove the zest (yellow part only) of the fourth Orange, Pan fry for a few minutes in boiling water and then rinse with cold water and coarsely chop the pulp finely.
Add the mayonnaise, chopped zest and orange juice, stirring very well.

Nappate with the prepared sauce and serve.
