Mussels au gratin
Instructions
Wash and scrape very well for free mussels from fouling.
Rinse again under running water.
Put them in a pan with high edges without water, cover and put over high heat with steam them open.
When the mussels open, remove the half-empty valve, put the clam in a large baking dish well.
In a bowl, mix well the Parmesan, breadcrumbs, parsley and chopped garlic, egg, a pinch of salt and pepper.
Fill with this mixture, sprinkle the mussels with a handful of breadcrumbs.
Add in the dish a few tablespoons of their water, left in the Pan, filtered through a cloth.
Put them in a hot oven at 200 degrees for about 15 minutes, bring to the table hot.

- 1000 g of mussels
- 50 g of grated parmesan cheese
- 20 g of breadcrumbs
- 2 cloves of garlic
- 1 egg
- 1 sprig of parsley
- 1/2 cup of olive oil extra virgin
- Salt
- Pepper
