Cream with exotic fruits
Instructions
Dice the mango, pineapple, and papaya.
Combine 2 tablespoons sugar, rum and a dash of coconut and let stand 30 minutes.
Whip the egg yolks with 4 tablespoons sugar, then add the starch and milk.
Thicken the cream on fire, allow to cool and stir in the fruit and whipped cream.
Refrigerate, garnish with the sliced papaya and Mint.

- 4 egg yolks
- 30 cl of milk
- 6 tablespoons of sugar
- 2 Teaspoons potato starch =
- 1 mango
- 2 papayas
- Dehydrated coconut
- Fresh mint
- 1 small pineapple
- 150 g of whipped
- 3 tablespoons of rum
