Instructions
Thus prepared anchovies are preserved for a few days.
Clean the anchovies pulling your head: this will extract the innards.
Put them in a bowl salandole modestly.
Pour lemon juice inside and add a bit of pepper.
Leave at least one day die, preferably two.
Before serving remove the bones and season the fillets of anchovies, which will become pure white, with olive oil and fresh onions cut into thin wheels.
Instead of lemon juice you can marinate the anchovies in vinegar white wine, in this case takes less time for steeping.
