Wash the eels with cornstarch and vinegar to remove the slimy; rinse with running water.
Cut into pieces without Peel and open book parts to remove the bone, ungeteli with a little oil and place them on the hot grill, making sure that you arrostiscano gently on both sides.
The eels are cooked when the skin is completely free of grease and dry.
You serve with polenta.
