Crepes with passion fruit
Instructions
Gently melt the butter in a large skillet and add the pulp of passion fruit and sugar.
Bring to a boil, stirring constantly, and cook on moderate heat until sugar has dissolved completely.
Add the zest and juice of an orange and lime juice and continue cooking for another 2-3 minutes.
Place the crepes in the pan with the sauce, cover with rum and let stand for a few minutes, then four and roundtrip piegatele into four individual dishes with sauce.
Whip the cream in a bowl, dolcificatela with a spoonful of sugar, profumatela with the stick of vanilla, scraped with a knife, then put a little in every dish.
Garnish with mint leaves and serve.
A more intense flavour Variant can be obtained by substituting orange juice with rum and grapefruit with Campari.
Ingredients and dosing for 4 persons
- 30 g of butter
- 2 maracuja
- 100 g of sugar
- 1 orange (zest and juice)
- == 1 Lime (juice)
- 8 crepes (crepes stuffed with v. mandarins)
- 4 cl of rum
- For garnishing:
- 12 cl of cream
- 1 tablespoon of sugar
- 1/2 stick of vanilla
- Some leaves of mint
