Crostini of factor
Instructions
Cut the Aubergine slices rather thick and lengthwise; Let them roast on the grill or cast iron plate.
Then place them in a bowl, drizzle with oil and flavour with salt, pepper, chopped Basil.
Cut the mozzarella into four slices.
Toast the bread, season with a little olive oil and arrange on each slice the mozzarella and two slices of Eggplant.
Ultimate with a powdered salt, passed the crostini under the grill for a few minutes and serve immediately.
Grilled toast buy a particular fragrance, however the oven at home or a cast iron plate giving the same a good result.
You can also use frozen already grilled eggplant.

- 2 eggplant
- 200 g of mozzarella
- 4 slices of bread
- Chopped basil
- Olive oil
- Salt
- Pepper
