Fillets of sole crostini with white truffle cream
Instructions
Put Brown in a pan 50 g of butter, add the floured fillets, cover with the marsala, season with salt and pepper and switch to hot oven for 15 minutes.
Remove from the oven, drain the fillets and keep them aside in a dish, add the cooking mushrooms washed and passed through a sieve and the cream, simmer for a few minutes, then add the slices of truffle and a knob of butter.
Sauté the croutons of bread in butter.
Lay the fillets fried croutons on top, sprinkle with the sauce and serve.

- 12 sole fillets
- 300 g of cultivated mushrooms
- 100 g of butter
- 6 slices of bread
- 100 G = = Cream
- 1 glass of marsala wine
- Flour
- Salt
- Pepper
- 50 g of white truffles
