Instructions

Peel and wash the leeks, then divide them lengthwise, into two parts.

Fry them in butter, salt and pepper spolverizzandoli must not colorirsi too, but slightly appassirsi.

If the leeks weren't novelli, boil earlier, dipping for 4 minutes in hot water; then drain them well and let them flavor butter as above.

Beat two eggs in a Holster and pour over leeks before they curdle while being prepared completely, add the lemon juice, stirring gently.

Serve immediately.
