Rustic Croutons (Crostoni Rustici)
Instructions
Fry the chopped onion and garlic in 2 tablespoons oil and 1 knob of butter.
Join the livers, Sage and chopped capers.
Add salt and pepper, sprinkle with the liquor and evaporate.
Continue cooking for 15 minutes, adding water if necessary.
Let cool and go to the vegetable mill.
Toast the bread and spread each slice with cream of liver.

- 400 g of chicken livers
- == 1 large onion
- 1 clove of garlic
- 1 handful of salted capers
- 35 leaves sage
- 1/2 shot of brandy
- 8 slices bread
- Olive oil
- Butter
