Fry chopped Bacon, onion, carrot, celery, capers, garlic and Sage in half the dose of oil.
Cook the slices of the heart in a pan with oil.
Add salt, pepper, add the tomato paste mixed with flour and a little hot broth and let thicken.
Serve with hot sauce.
