The poor anchovy
Instructions
Ask your fishmonger to clean the anchovies (some remove only the head and entrails, others even the plug and sfilettano perfectly).
Dissolve salt in vinegar, and pour it into a bowl where you previously placed the anchovy fillets.
Leave to cool for 3 or 4 hours so that the vinegar bake the fish.
Remove the vinegar, anchovies and arrange in layers in another mixing bowl, with the oil and topped with onion rings.
Keep in a cool place for a few hours, and then eaten together with bread and white wine.
Ingredients and dosing for 4 persons
- 500 g of anchovies
- 30 cl of no wine vinegar too acidic
- Salt
- Olive oil extra virgin
- 1 red onion
