Lemon Cake (Dolce al Limone)
Instructions
Working the eggs with the honey until mixture is fluffy.
Sift the flour with the baking powder and fold into egg mixture.
Combine oil and lemon juice and work the dough until it becomes smooth and creamy.
Pour the mixture into a buttered and floured rectangular mold and bake in hot oven at 200 degrees for about 45 minutes.
Wait it is cool to pull out.
This cake will keep for 3-4 days wrapped in aluminum.

- 150 g of flour
- 100 g of honey
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 4 eggs
- 3 teaspoons of baking powder
