Raw anchovies with lemon
Instructions
Clean the anchovies, remove the head and spine, divide them into threads and ask, well stretched, in a large pot.
Sprinkle with a pinch of salt and a pinch of ground white pepper, drizzle with the juice of 5 lemons and let marinate for at least 12 hours, rivoltandole from time to time.
When will be enlightened, remove anchovies from marinade, then soak them in layers in a porcelain bowl or jar and cover with olive oil.
You can keep for a day, but they are definitely the most delicious eaten right away, after marinating.

- 500 g of fresh anchovies
- 5 lemons (juice)
- 25 cl of olive oil (optional)
- White pepper
- 1 pinch of salt
