Coarsely chop the almonds, add sugar, all but two tablespoons flour, pine nuts, grated rind of half a lemon, egg yolks, brandy and a dash of cinnamon.
Mix well and make a roll diameter of an inch, then cut into long pieces with one stone.
In the middle of each bit making a dimple, then brush each stone with a little egg white beaten lightly.
Bake a plate and sprinkle with the remaining flour; arrange the beans and put in the oven at 160 degrees for about 30 minutes.
Serve cold, accompanied by sweet white wine.
These beans are called ' dead ' because they traditionally ate the 2 November.
