Fillets of sole with peppers
Instructions
Cut into pieces of uniform size sole fillets and arrange on a plate.
Toss with the olive oil and the lemon juice and sprinkle with ginger, salt and a pepper minced.
Cover and let rest in a cool place for an hour.
Clean the peppers, cut into julienne, separated the different colors, then boil for one minute in boiling water, drain, rinse under cold water and let them drain well.
Clean the lettuce, rinse it and let it drain.
Spread the salad into 4 individual plates, placing it in a radial pattern, and lie down on the strips of pepper divided by color.
Make a salsetta by mixing the ingredients list and pour over vegetables.
Fate sear the pieces of fish in a saucepan over high heat, 1 minute per side, let them cool and deliver dishes with vegetable.
Ingredients and dosing for 4 persons
- 500 g of sole fillets
- 3 tablespoons of olive oil
- Salt
- Pepper
- 1 pinch of ginger powder
- 1 tablespoon of lemon juice
- 1/2 red pepper
- 1/2 green pepper
- 1/2 yellow pepper
- 1 bunch of salad lettuce lollo red
- For the sauce:
- 2 tablespoons of olive oil
- Salt
- 2 tablespoons of white wine vinegar
- 1/2 teaspoon of spicy mustard
