Macerate for an hour the fillet in plenty of red wine.
Chop the carrot, onion, celery, pancetta and saute this chopped butter, sprinkle with flour and nutmeg, salt and pepper.
Add the tenderloin, Deglaze with the wine and cook covered for about an hour.
Serve the fillets cut into slices.
