Instructions

Cut the meat against the grain, without coming down to the bottom, in order to make pages like a book.

Between a slice and the other place a Sage leaf and a thin slice of bacon, salt and pepper.

Tie the piece lengthwise roast in butter and oil; close the container and cook for about 1 hour and 30 minutes.
