Cold fusilli with arugula
Instructions
While the pasta water, salted, goes to a boil, remove the Peel tomatoes by dipping them in boiling water.
Cut the flesh into small pieces by removing the seeds and place in a bowl.
Clean and cut into strips the arugula.
Let the mozzarella cubes.
Throw the dough.
Place the mozzarella in the bowl with the tomatoes, add the arugula, a pinch of oregano and a few leaves of Basil crushed with hands, half a glass of olive oil, salt and pepper.
Stir to emulsify.
When cooking, be fusilli drain, rinse under cold water and drain again.
Add the pasta to vegetables, stir and serve.
To inaugurate the summer prepared this dish that gives fresh tomato to the unmistakable bitterness of the Arugula and enriched with spices.
The presence of the mozzarella makes the more substantial result: almost a single dish!

- 1 mozzarella
- 1 pinch of oregano
- Some leaves of basil
- Olive oil
