Wholemeal fusilli with zucchini

Instructions

Trim the zucchini and cut into julienne.

In a pan to wilt in 2 tablespoons oil thinly sliced onion.

Join the courgettes and herbs (but not the parsley), salt and stew them al dente.

Boil the pasta, drain and dress with Zucchini.

Finish with a drizzle of raw oil and parsley.
