Clean, flame and tie the hen.
Cook for 1 hour and 1/2 water with the onion, celery, carrot, parsley, salt and pepper.
Cut it into pieces and place in a dish where you placed a layer of Myrtle leaves, cover it with leaves of Myrtle and with a round tray.
Leave it so ' at least 12 hours so that the meat take the scent of aromatic grass.
