Pan fried chicken
Instructions
Chop the bell pepper, onion, garlic, mint and tomato.
Add the vinegar and chopped parsley.
Stir well and cover with the marinade the chicken, cut into pieces.
Let it sit for a couple of hours.
Heat half of palm oil in a large frying pan and fry the chicken pieces well drained.
Leave on the heat for about 30 minutes, stirring often.
Place the mixture into the Pan, add salt, cover with a lid and let seasoning over medium heat for 20 minutes.
Add bay leaf and continue cooking for another 2 hours, basting occasionally with hot water so that the chicken is almost immersed in the liquid and can cook evenly.
Chopped dried shrimp with cashews and peanuts, adding a few tablespoons of water so as to obtain a cream.
Pour the mixture into the Pan and simmer for 15 minutes.
Add remaining oil and finally the coconut milk.
Cook 10 minutes more and serve.

- 1 pretty big hen
- 1 onion
- 1 pepper
- 1 tomato
- 2 cloves of garlic
- 1 leaf of laurel
- 100 g of dried shrimp
- 100 g of raw cashews
- 100 g of raw peanuts
- 1 tablespoon of wine vinegar
- 10 cl of palm oil
- 10 cl of thick coconut milk
- Some leaves of mint
- Few sprigs of parsley
- Salt
