Lemon Ice-Cream (Gelato di Limone)
Instructions
Cook for 5 minutes 160 g sugar, salt and 230 g of water (about 1 1/2 and glass).
Combine milk, lemon and mix.
Put the liquid in the freezer until it is hardened.
Whip until stiff clear with sugar.
Take the mixture from the freezer and break it with a spoon and reduce it in cream with whisk.
Join the clear and put in the freezer to freeze.

- 220 g of sugar
- 1 pinch of salt
- 120 g of milk
- 120 g of lemon juice
- 2 egg whites
- Water
