Instructions
Beat in a bowl with a wooden spoon the egg yolks with sugar: when everything will be frothy, add, stirring, the ricotta sieved and finally the liquor.
With a wet gauze and well squeezed a mould lined (preferably rectangular), pour the mixture preparation, level it well, cover with a gauze or with metallic paper and put in the fridge for at least 3 hours.
Put the ice cream on a serving dish, remove the cheesecloth, decorated with cherries under spirit or with candies, and put in the refrigerator until serving.
Ingredients and dosing for 6 persons
- 500 g of ricotta romana
- 4 egg yolks
- 100 g of sugar
- 5 tablespoons of rum
- Cherries under spirit (or candied fruits)
