Gnocchi del casentino
Instructions
Boil the spinach (or already boiled them is equal, in case it will take 3 big beautiful balls), mince finely.
Put everything in a bowl and add the ricotta, eggs, a handful of Parmesan cheese, 2 tablespoons flour, salt, pepper and a teaspoon of nutmeg.
Stir the dough and balls large like a nut with the flour.
In a very large pot boil the broth and toss, gnocchi one at a time.
Cook for about 5 minutes.
Serve soup that is dry, with melted butter and Sage or with tomato sauce.
People who like we put a bit of pecorino.

- 350 g of ricotta
- 500 g of spinach
- 2 eggs
- 2 tablespoons of flour
