Salmon salad and beads
Instructions
Peel and wash the lettuce.
After drained good to put them in a salad bowl.
Add radishes and onions cut into thin slices and salmon strips.
Prepare a vinaigrette emulsifying lemon juice filtered to the strainer, oil, salt, pepper and salad conditevi.
Mix well.
In a bowl mix the fresh ricotta with a pinch of dill and a dollop of minced parsley.
Form balls and distribute them on salad.
Serve immediately.
Accompanying wines: Gavi DOC, Verdicchio Di Matelica DOC, Locorotondo DOC.

- 150 g of smoked salmon
- 1 chicory salad
- 2 heads of novella salad
- Belgian endive salad (endive)
- 1 pinch of dill
- Radishes
- 60 g of ricotta
- 1 scallion
- 1 sprig of chopped parsley
- Lemon
- Olive oil
- Salt
- Pepper
