Beans Salad (Insalata di Fagioli Lessi)
Instructions
Wash the beans and let them cook for an hour along with the carrot, onion and 1 bunch of parsley in lightly salted water.
Finely chop the spring onions, beat in 1 cup oil, 1 tablespoon of vinegar and lemon juice and pouring them into other in the salad bowl.
Drain the beans cooked, let them cool and place them in the bowl with the other ingredients.
Sprinkle chopped parsley salad and olives.

- 400 g of fresh beans
- == 1 Carrot Cut into rings
- 1 onion
- 5 fresh onions
- 1 bowl of olive oil
- 1 tablespoon of wine vinegar
- Lemon juice
- Parsley
- Salt
- Greece pitted olives
