Scampi and Asparagus Salad (4)
Instructions
Remove any black vein with prawns, wash and boil them for about 15 minutes in a saucepan with boiling water and the bouquet garni.
Clean and wash long under running water the asparagus.
Boil them, drain and cut into pieces just the tips.
Pass through a sieve the yolks of eggs and collect them in a small bowl, add the oil, mayonnaise, salt and pepper; stirring with a wooden spoon, mix the ingredients until obtaining a cream.
Drain the shrimp, put them in a salad bowl, combine asparagus, seasoned with the prepared sauce, stir and bring to the table.

- 200 g of shelled shrimp
- 1000 g of asparagus
- == 1 bouquet garni
- 2 yolks of hard-boiled eggs
- 3 tablespoons of olive oil
- 1 tablespoon of mayonnaise
- Salt
- Pepper
