Ham and asparagus rolls
Instructions
Choose thinner asparagus; trim evenly lengthwise, wash them and form small bunches from 5-6 tips (how many can contain a slice of Proscuitto wrapped).
Arrange stacks in a saucepan of boiling water, with the points up and out of the water.
Cook, drain and allow to dry on a tea towel.
Prepare a sauce in a bowl with two chopped boiled eggs, a bit of anchovy paste, lemon and olive oil, and this season the bunches of asparagus, then place a slice of ham leaving protrude just a little tips and wrap.
Serve with tomato slices and lemon, artichokes, mushrooms and sliced cicorietta dressed with oil extra virgin olive and balsamic vinegar.

- 2 hardboiled eggs
- Anchovy paste
- Lemon juice
- Olive oil
- 1 slice of ham
- Some slices of tomato
- Some slices of lemon
- Artichokes
- Mushrooms
- Chicory salad
- Balsamic vinegar
