Paupiettes of sole (2)
Instructions
Place on cutting board the sole fillets, lay at one end 1 shrimp and a few flakes of fontina.
Roll up, securing with toothpicks rolls on 2 sides, flour, then add butter.
Spray them with a bit of brandy and let it evaporate, then cook for 10 minutes by spraying with white wine.
Add salt, pepper and serve.

- 8 fillets sole
- 8 prawns
- Some scales of fontina cheese
