Instructions
In a bowl, pour the yolk of the egg and a pinch of salt.
Beat well with a wooden spoon or a whisk, adding a little drip of oil.
As soon as the mixture begins to harden add few drops of lemon juice then oil alternating ingredients, pouring more so drop by drop until the end.
Ingredients and dosing for 4 persons
- 100 g of olive oil
- 1 egg
- 1/2 lemon
- 1 tablespoon of white wine vinegar
- 1 pinch of salt
