Chocolate Marquise (Marquise al Cioccolato)
Instructions
Break the chocolate in a saucepan and let it melt soft focus with 3 tablespoons of water.
Work the butter knife to soften it well.
Separate the clear from the yolks and add the 5 egg yolks, one at a time, with butter, stirring well after each addition.
Add the icing sugar and continue to mix.
Add the melted chocolate and perfumed with vanilla (or coffee if you prefer).
Let cool.
Beat so dense the snow 3 egg whites and add them to the mixture.
Pour into a buttered pan and let it sit for 10 hours in the fridge.
Served on a bed of crème anglaise.

- 250 g of chocolate
- 125 g of butter
- 1 sachet of vanillin
- 3 eggs
- 2 egg yolks
- 100 g of icing sugar
