Instructions
Come soak for a few hours 2000 g of chestnuts in cold water.
Then they boil for 2 hours with the peel and very slowly.
You peel still hot and you put in the syrup.
The syrup is prepared with a litre and a half of water and 1000 g sugar: do you boil water with sugar until it's a bit dense.
Pour into a pan, add the chestnuts and boil slowly for an hour with a stick of vanilla.
Then they absorb sugar for 3 hours always keeping them warm.
Finally, you put a drain on a cloth.
