Instructions

Cut peeled Eggplant lengthwise into slices 1/2 cm thick.

Distenderle on a platter, season with salt and leave to rest for 1/2 hour, then wash them and pressarle.

Then FRY them in olive oil and serve with the whipped yoghurt with garlic at will.
