Fried artichokes and brains
Instructions
Blanched and peeled brains and Sweetbreads.
Clean the artichokes, divide them into wedges for 30 minutes leave in water acidulated with lemon juice.
Dry thoroughly and sprinkle with flour, as well as the brains and Sweetbreads.
Passed in the beaten egg with salt and pepper and FRY in very hot oil.
Before serving, let them dry on paper towels.
