Poor cod with herbs in cucumber sauce
Instructions
Clean the fish, give entrails, wash them under running water and let them drain.
Chop the parsley and chives, put them in a large pot and mix in the flour, a pinch of salt and ground pepper.
Pour the milk in a deep dish, soak up the fish, and then toss them in the mixture of flour and herbs.
Take a pan and heat in 50 g of butter and two tablespoons of olive oil and friggetevi fish, a few at a time, one minute per side over high heat, then remove from the Pan, drain them on absorbent paper and keep them warm.
Peel the cucumber, split it in two lengthwise, remove the seeds, then cut with each half into thick slices.
Fry them in a pan with rest of butter, moderate heat for 30 seconds, then add the wine, salt and pepper, bring to the boil and let stand for a few minutes.
Finally, remove the preparation by the fire, allow to cool and add the cream.
Place the fish on a serving dish, sprinkle them with cucumbers and their sauce and serve.

- 1/2 bunch of chives
- 8 tablespoons of flour
- 6 tablespoons of milk
- 750 g of poor cod
- 75 g of butter
- 2 tablespoons of olive oil
- 1 cucumber
- 25 cl of white wine
- 120 g of sour cream
- Salt
- Black pepper
