Shallots and cheese soup
Instructions
Simmer 4 sliced shallots in 1 tablespoon of butter, add 1 tablespoon of flour, stir and add 1 1/2 cup of boiling meat stock.
Add salt, pepper, cover and cook for 30 minutes on low heat.
Pass it through a sieve and season with 2 tablespoons cream.
Pour into a tureen with 4 slices of bread fried in butter and sprinkled with grated cheese.
