Instructions

(Sephardic recipe) INGREDIENTS for 4 PEOPLE 2 red peppers or yellow, 4 large ripe tomatoes, 2 large onions, 4 eggs, salt and pepper, chili pepper (optional) olive oil, Peel and chop the onions, wash the peppers eliminated internal white filaments and cut the flesh into slices.

Fairies in a saucepan heat 2 tablespoons of olive oil and Brown the onions, then add the peppers.

Cook for 10 minutes and then washed and scalded tomatoes in boiling water.

Take away the skin and seeds and cut the flesh into cubes.

Add peppers to taste, mix and add the chilli.

Shortly before serving, beat the eggs and pour on the preparation.

There is also an Italian version of this dish, which is called? chekchuka? and peppers, so that is a kind of omelette with tomato.
