Instructions

Macerate the ham in brandy.

Mix the bechamel, ham, egg yolk and albumen mounted to snow.

Divide the mixture into individual ramekins to high walls and buttered.

Bake in the oven at 190 degrees for about 20 minutes.

Serve immediately.
