Mostarda di frutta
Instructions
Peel the fruit and cut it into pieces, removing the seeds and core.
Cook until wine is soft and pass through a food mill.
Weigh it and put it back in the pot with the sugar equivalent.
Add the candied fruits and stir cooking until the mixture is dry (about 10 minutes).
Let cool, then add a few drops of mustard.
Cool mostarda thus obtained; to taste add more mustard and close it in pots.
Ingredients and dosing for 4 persons
- 500 g of quince
- 1 pretty big apple
- 1 rather large pear
- 50 g of candied orange peels and candied citron peel
- 75 cl of white wine
- Sugar
- Few drops of mustard extract
