Pears cooked flambé
Instructions
Peel the pears, leaving whole with the petiole.
With a small knife removed from below the core with the seeds.
With sugar, water and orange zest prepare the syrup in a small saucepan and let it simmer for 5 minutes.
Add pears standing next to each other and cook fresh focus for about 30 minutes, occasionally they have been wetted with the syrup.
Remove pears and straight appoggiatele with small upward in a round Cup.
Add 3 tablespoons of rum syrup of pears and let it reduce to minimum heat for another 5 minutes, then pour piping hot on the pears.
Strew with grated ginger, then put the remaining rum in a tbsp, give it focus and pour on pears and served flaming.
Ingredients and dosing for 4 persons
- 8 small firm pears
- 60 g of sugar
- 1 glass of water
- == 1 lemon (zest)
- 2 cups of rum
- 1 pinch of grated ginger
