Instructions
In a marble mortar crush together the Basil, salt, pine nuts and garlic.
When the ingredients are well beaten combine cheese and work the mixture with a wooden spatula so that it becomes homogeneous.
Join the wire oil continuing to work the mixture until it becomes a cream.
Ingredients and dosing for 6 persons
- 40 leaves of genovese basil
- 4 cloves of garlic
- 2 tablespoons of sardinian pecorino cheese
- 2 tablespoons of parmigiano
- Olive oil extra virgin mild
- 30 g of pine nuts
- Unrefined sea salt bulk
